Sotong Sumbat Sos Masam Manis

6 medium size squid, remove skin and clean innards
1 large tomato, diced
1 onion, chopped

Stuffing Ingredients
200g fish paste
1 red chili, remove seeds, chopped finely
1 tsp finely chop tumeric leaf
1/4 tsp salt
1/4 tsp ground black pepper
(mixed together)

Sauce Ingredients
6 tbsp Kimball Chili Sauce
1 tbsp Kimball Oyster Sauce
2 tbsp lime juice
1 tbsp sugar
(mixed together)

Thickening Mixture
1 tbsp cornflour
5 tbsp water

Serving: 4
1) Divide stuffing mixture into 6 portions. Stuff mixture into squid cavity and secure the squid with bamboo skewer.
2) Steam stuffed squid for 20 minutes over medium fire. Place cooked squid onto serving plate. Mix the remaining liquid with sauce ingredients.
3) Bring the sauce ingredients to a gentle boil, add in thickening mixture. Once it starts to thicken, add in diced tomatoes, onions and bring it to a boil. Turn off fire.
4) Pour sauce over steamed squid and serve.
