Sweet Sour Chicken with Lychee

400g chicken fillet
1tbsp soy sauce
1 tsp salt
1 tbsp ginger juice
(marinate chicken for 1/2 hour)

1 can Lychee, drain (keep juice for sauce)
1 cucumber, sliced

Sauce Ingredients
4 tbsp Kimball Tomato Ketchup
1/2 tbsp Kimball Oyster Sauce
1 tbsp sugar
1/3 cup lychee juice

Serving: 4
1) Deep-fry marinated chicken fillet till lightly golden and cooked. Drain.
2) Heat 2 tablespoons oil and saute garlic till fragrant. Add in sauce ingredients and cook for 1/2 a minute. Add in fried chicken, lychees and mix well.
3) Serve chicken lychee in a plate lined with sliced cucumber.
